What is Burrito?

Burritos originated in Mexico.

burrito, a common cylindrical food item of Mexican and American origin consisting of a tortilla wrapped around a mixed filling of such ingredients as meat, cheese, beans, and vegetables. The burrito differs from the taco in that the circular tortilla in the latter case is simply folded, not wrapped. The deep-fried version of the burrito, popular throughout the American Southwest, is the chimichanga.

Immigrants from both central Mexico and Sonora introduced the burrito to Los Angeles in the 1930s, about the time that the first recipe for it appeared in an American cookbook.

The food of Mexico varies widely by region, depending on what is grown there.

The flour-tortilla-wrapped Sonoran burrito grew measurably larger when it crossed the international border and found a welcome home in southern California. Claimed as an invention of both California and Texas, one variant is the “breakfast burrito,” which typically contains enough food for a couple of meals, with eggs, beans, cheese, chile, avocados, tomatoes, salsa, potatoes, bacon, chorizo sausage, or many such components. A lunch or dinner burrito typically comprises a similarly wide range of ingredients, a single helping often providing an entire day’s worth of recommended calories.



A deep-fried burrito is known in the Southwest as a chimichanga. Several restaurants in Arizona and New Mexico claimed to have originated the dish in the mid 20th century, but it has been traced to mining towns more than a century earlier in the Mexican state of Sinaloa and to Chinese mine workers who ate it as a local approximation of an egg roll. In some regions of Mexico the chimichanga is called achivichanga. The chimichanga has become a fixture on menus in Mexican restaurants throughout the United States and Canada.

What Is a Torta?

A torta is a Mexican sandwich served on a soft roll and filled with meat, sauce, and various toppings such as crema, avocado, salsa, and iceberg lettuce. Tortas can be filled with almost anything, but some of the most famous regional versions include Guadalajara's torta ahogada and Mexico City's pambazo and torta de tamal.

Mexican tortas are defined by two types of bread:bolillosandteleras.

  • Bolillosare torpedo-shaped rolls similar to a soft baguette. Tortas made onbolillorolls are sometimes calledlonches. Sourdoughbolillosare known asbilotes, and they can be sweet or savory.
  • Telerasare flatter, softer, and rounder than bolillos, and they usually have two score marks down the center.

MEXICAN SANDWICH

Taco, an internationally popular hand-sized food item of Mexican origin combining seasoned meat, vegetables, and other fillings and served inside a folded or rolled corn or flour tortilla.


Maize has been domesticated in Mexico for at least 9,000 years, and one of the first uses of ground maize was very likely the tortilla, a flatbread made of maize, ground lime, and water. The nametacomay come from the Spanish word for dowel, as in a plug to fill a hungry stomach, or, perhaps likelier, from the Nahuatl wordtlacoyo, the name of a related foodstuff. The taco is made of that bread base, but its ingredients thereafter can be various. In Mexican cuisine, tacos can contain beef, chicken, pork, fish, and shellfish as well as vegetables such as lettuce, cabbage, radishes, chiles, and tomatoes. Tacos can also be vegetarian, filled with refried beans, avocado, potatoes, and cheese.

A crispy fried tortilla, often spread with refried beans or guacamole and topped with vegetables and other ingredients. Popular in Mexico, the tortilla—usually a corn tortilla—is flat or bowl-shaped after frying and given a layer of beans or guacamole thick enough to hold the other toppings. Depending on the region, tostadas might be topped with chicken, pork, or seafood, as well as some combination of lettuce, tomato, onion, cilantro, salsa, cheese, and sour cream. Despite the tortilla being fried, tostada means “toasted” in English. The dish originated as a way to use tortillas once they were too stale for tacos.

However, the most common version using two whole tortillas is calledsincronizada, which translates as “synchronised” in Spanish. It is a quesadilla filled with ham and cheese and sometimes chorizo or refried beans.
